2 medium zucchinis

1 cup marinara sauce (preferably homemade or high-quality store-bought)

1 cup shredded mozzarella cheese

1/2 cup sliced pepperoni (or your choice of toppings such as bell peppers, olives, or mushrooms)

1 tablespoon olive oil

1 teaspoon dried Italian herbs (oregano, basil, and thyme)

1/4 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves (for garnish, optional)

Instructions
 

Preheat your oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the zucchinis: Wash the zucchinis and slice them into 1/2 inch thick rounds. If they’re very watery, you may want to sprinkle them lightly with salt and let them sit for 15 minutes to draw out excess moisture. Pat them dry with a paper towel.

      Season the zucchini: Place the zucchini rounds on the prepared baking sheet. Drizzle them with olive oil, and sprinkle salt, pepper, garlic powder, and Italian herbs evenly over the top.

        Bake the zucchinis: Bake the zucchini rounds in the preheated oven for about 10-12 minutes, or until they are slightly tender but not too soft.

          Add the toppings: Remove the zucchini from the oven and spoon a small amount of marinara sauce onto each round, followed by a generous sprinkle of shredded mozzarella cheese. Top with pepperoni slices or your choice of additional toppings.

            Melt the cheese: Return the zucchini pizzas to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
