4 medium zucchinis, sliced into rounds

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes or until translucent.

    Add Garlic and Zucchini: Stir in the minced garlic and sliced zucchini. Cook for 5-7 minutes, stirring occasionally, until the zucchini is tender but still has a slight crunch.

      Incorporate Tomatoes and Seasoning: Add the halved cherry tomatoes and Italian seasoning. Season with salt and pepper to taste. Cook for an additional 3-4 minutes, allowing the tomatoes to soften slightly.
