¼ cup brown sugar

¼ cup granulated sugar

½ tsp vanilla extract

1/3 cup coconut oil (melted) or unsalted butter

1 large egg

½ cup shredded coconut (unsweetened)

½ cup chopped walnuts or pecans (optional)

¼ tsp salt

½ tsp ground cinnamon

½ cup chocolate chips (or raisins for a healthier option)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
