Turkey Skewers with Lemon Salsa

For the Turkey Skewers:

1 lb ground turkey

1/4 cup breadcrumbs

1/4 cup finely chopped onions

2 cloves garlic, minced

1 tsp paprika

1 tsp cumin

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp cayenne pepper (optional for heat)

1 tbsp fresh parsley, chopped

2 tbsp olive oil

Skewers (wooden or metal, soaked in water if wooden)

For the Lemon Salsa:

1 cup diced tomatoes

1/2 cup diced cucumber

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

Zest and juice of 1 lemon

1 tbsp olive oil

Salt and pepper to taste

Optional: 1 jalapeño, seeded and finely chopped for extra spice

Prepare the Turkey Mixture:

    In a large mixing bowl, combine ground turkey, breadcrumbs, chopped onions, minced garlic, paprika, cumin, salt, black pepper, cayenne pepper (if using), and chopped parsley. Mix well until everything is evenly combined.

      Shape the Skewers:

        Divide the turkey mixture into equal portions (about 4-6, depending on your desired skewer size). Wet your hands slightly and shape each portion around a skewer, forming long sausage shapes, making sure to compact them well to prevent falling apart during cooking.

          Preheat the Grill:

            Preheat your grill to medium-high heat (around 375°F / 190°C). If using an oven, set it to broil.

              Cook the Skewers:

                Brush the skewers lightly with olive oil. Place them on the grill and cook for about 10-12 minutes, turning occasionally, until they are cooked through and internal temperature reaches 165°F (75°C). If broiling, cook for about 8-10 minutes, flipping halfway through.

                  Make the Lemon Salsa:

                    In a bowl, combine diced tomatoes, cucumber, red onion, parsley, lemon zest, lemon juice, and olive oil. Season with salt and pepper to taste. If you’re adding jalapeño for heat, mix it in at this stage. Adjust seasoning and lemon juice if necessary, to your liking.

                      Serve:

                        Once the turkey skewers are done, remove them from the grill and let them rest for a couple of minutes. Serve hot, drizzled with the fresh lemon salsa on top or on the side for dipping.
