Tuna Lettuce Wraps with Peach Glaze

1 can (5 oz) tuna, drained (preferably in olive oil)

1/2 cup diced cucumber

1/4 cup diced red bell pepper

1/4 cup finely chopped red onion

1/4 cup mayonnaise (or Greek yogurt for a lighter version)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

Salt and pepper, to taste

8 large leaves of butter or romaine lettuce

1 ripe peach, pitted and diced

1 tablespoon honey

1 teaspoon soy sauce

1/2 teaspoon ginger paste (or freshly grated ginger)

1 teaspoon olive oil

Chopped fresh cilantro or scallions for garnish (optional)

Instructions
 

Prepare the Peach Glaze: In a small saucepan over medium heat, combine the diced peach, honey, soy sauce, ginger paste, and olive oil. Cook for about 5-7 minutes, stirring occasionally, until the peaches are soft and the mixture thickens slightly. Remove from heat and let it cool.

    Make the Tuna Mixture: In a medium mixing bowl, combine the drained tuna, diced cucumber, red bell pepper, red onion, mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until fully combined. Adjust seasoning to taste, ensuring it’s flavorful.

      Assemble the Lettuce Wraps: Take a lettuce leaf and spoon a generous amount of the tuna mixture onto the center. Drizzle some of the peach glaze over the top of the tuna mixture.
