Tofu Tacos with Lime Slaw

Ingredients
  

For the Tofu:

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

½ teaspoon black pepper

½ teaspoon salt

For the Lime Slaw:

4 cups shredded green cabbage

1 cup shredded carrots

½ cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon apple cider vinegar

1 tablespoon honey or agave syrup

Salt and pepper to taste

For Assembly:

8 small corn or flour tortillas

Avocado slices (optional)

Optional toppings: diced tomatoes, salsa, hot sauce

Instructions
 

Prepare the Tofu:

    - Start by cutting the pressed tofu into small cubes or rectangles, about ¾ inch thick. In a mixing bowl, combine the olive oil, soy sauce, smoked paprika, garlic powder, cumin, black pepper, and salt. Add the tofu to the bowl and gently toss to coat all the pieces evenly. Allow the tofu to marinate for at least 15 minutes, or up to an hour for more flavor.

      Cook the Tofu:

        - Heat a non-stick skillet over medium-high heat. Once hot, add the marinated tofu cubes in a single layer. Cook for about 5-7 minutes on each side, or until golden brown and crispy. You may need to do this in batches to avoid overcrowding the pan. Once cooked, remove from heat and set aside.

          Prepare the Lime Slaw:

            - In a large bowl, combine the shredded cabbage, shredded carrots, and chopped cilantro. In a small bowl, whisk together the lime juice, apple cider vinegar, honey (or agave syrup), salt, and pepper. Pour the dressing over the cabbage mixture and toss until well combined.
