Tofu Lettuce Wraps with Peach Glaze

1 block firm tofu, pressed and drained

1 tablespoon olive oil

1 tablespoon soy sauce

1 clove garlic, minced

1 teaspoon fresh ginger, minced

1 red bell pepper, finely diced

1 small carrot, grated

3 green onions, chopped

1 tablespoon sesame seeds

1 head of butter or iceberg lettuce, leaves separated

Salt and pepper to taste

For the Peach Glaze:

1 cup ripe peaches, diced (or canned peaches, drained)

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon apple cider vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (optional for thickening)

A pinch of salt

Instructions
 

Prepare the Tofu: Cut the pressed tofu into small cubes. Heat the olive oil in a large skillet over medium heat. Add the tofu cubes and sauté until they start to turn golden brown, about 5-7 minutes.

    Flavor the Tofu: Add the minced garlic and ginger to the skillet, stirring constantly for about 1 minute. Then pour in the soy sauce, stirring to coat the tofu evenly. Season with salt and pepper to taste.

      Add Veggies: Stir in the diced red bell pepper, grated carrot, and chopped green onions. Cook for an additional 3-4 minutes until the vegetables are tender but still crisp. Remove from heat and sprinkle sesame seeds on top.

        Make the Peach Glaze: In a small saucepan over medium heat, combine chopped peaches, honey, apple cider vinegar, and a pinch of salt. Cook until the peaches are soft, about 5-7 minutes. If you desire a thicker glaze, stir in the cornstarch mixture and cook for an additional 1-2 minutes until it thickens. Remove from heat and let it cool slightly.
