2 ripe peaches, sliced (or substitute with canned peaches, drained)

1 medium yellow onion, thinly sliced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cinnamon

1 teaspoon smoked paprika

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

2 tablespoons honey or maple syrup (optional, for added sweetness)

Fresh thyme or basil for garnish

Prepare the Sweet Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and season with salt, black pepper, ground cinnamon, and smoked paprika. Sauté for about 5-7 minutes, stirring occasionally, until they start to soften and turn golden brown.
