1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/4 teaspoon pepper (or to taste)

4 large eggs (or egg substitutes if desired)

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prepare the Sweet Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and sauté for about 10-15 minutes, stirring occasionally, until they are tender and slightly caramelized.
