2 medium sweet potatoes, diced into small cubes

1 lb ground turkey

1 medium onion, chopped

2 garlic cloves, minced

1 red bell pepper, diced

1 cup spinach, roughly chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

Optional: 1/4 cup feta cheese or shredded cheese of choice

Instructions
 

Prep the Sweet Potatoes: Start by peeling and cubing the sweet potatoes into about 1/2-inch pieces. This will ensure even cooking.

    Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and sprinkle with salt and pepper. Sauté for about 10-12 minutes, stirring occasionally, until tender and slightly caramelized.

      Add Ground Turkey: Push the sweet potatoes to the side of the skillet. In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the ground turkey. Cook for about 5-7 minutes, breaking it apart with a spatula until browned and cooked through.

        Sauté Aromatics: Add the chopped onion and minced garlic to the skillet. Stir everything together and cook for 3-4 minutes until the onion becomes translucent.

          Incorporate Peppers and Spices: Add the diced red bell pepper, cumin, smoked paprika, and chili powder. Mix well and cook for another 3-4 minutes until the peppers soften.

            Add Spinach: Fold in the chopped spinach and cook until just wilted, about 2 minutes. If desired, sprinkle with feta or your choice of cheese and let it melt slightly.
