Ingredients

1 cup all-purpose flour

1/2 cup rolled oats

1/3 cup brown sugar, packed

1/2 teaspoon salt

1/2 cup cold unsalted butter, cubed

1 cup pecans, roughly chopped

3/4 cup maple syrup

2 large eggs

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup heavy cream

Instructions

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the flour, oats, brown sugar, and salt. Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.

Press the crust into the pan: Grease a 9x9-inch baking pan and press the crust mixture evenly across the bottom. Bake for 15 minutes, or until lightly golden. Remove from the oven and let it cool slightly.

Make the filling: In a large bowl, whisk together the maple syrup, eggs, vanilla extract, cinnamon, and nutmeg until smooth. Stir in the chopped pecans.

Combine the mixture: Pour the pecan filling over the baked crust, spreading evenly. Drizzle the heavy cream on top to create a rich finish.

Bake the bars: Return the baking pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.

Cool and slice: Allow the bars to cool in the pan on a wire rack for at least 30 minutes. Once cooled, use a sharp knife to cut into squares or bars.

Serve and enjoy: These Sweet Maple Pecan Pie Bars are best enjoyed slightly warmed, topped with a dollop of whipped cream or a scoop of vanilla ice cream if desired.
