Sweet Corn & Edamame Salad

Ingredients
  

2 cups fresh sweet corn kernels (about 3-4 ears of corn)

1 1/2 cups shelled edamame (fresh or frozen)

1 medium red bell pepper, diced

1 small red onion, finely chopped

1/2 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 lime, juiced (about 2 tablespoons)

2 tablespoons extra-virgin olive oil

1 teaspoon honey (or agave syrup for a vegan option)

Salt and pepper to taste

Optional: 1/4 teaspoon chili flakes for some heat

Instructions
 

Cook the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn and cook for about 3-5 minutes, just until tender. Drain and cool. If using frozen corn, simply microwave according to package instructions then cool.

    Prepare the Edamame: If using fresh edamame, steam it for about 5 minutes until tender. If using frozen edamame, cook according to the package instructions. Drain and let cool.

      Combine the Veggies: In a large mixing bowl, combine the cooled sweet corn, edamame, diced red bell pepper, chopped onion, cherry tomatoes, and diced avocado.

        Make the Dressing: In a small bowl, whisk together lime juice, olive oil, honey, salt, pepper, and optional chili flakes for some heat until well combined.

          Toss It All Together: Pour the dressing over the salad mixture and gently toss to combine all ingredients evenly. Be careful not to mash the avocado.

            Garnish and Serve: Fold in the chopped cilantro and give the salad one last gentle toss. Taste and adjust seasoning if necessary. For best results, let the salad sit for at least 15 minutes in the fridge before serving to allow the flavors to meld.
