Ingredients

4 cups frozen sweet corn, thawed

2 cups shredded sharp cheddar cheese

10 large waffles, crispy (store-bought or homemade)

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup chopped fresh parsley (for garnish)

Optional: hot sauce for serving

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.

Prep the Waffles: If using frozen waffles, toast them until golden brown and crispy. Once toasted, cut them into quarters and spread them evenly in the greased baking dish.

Mix the Filling: In a large mixing bowl, combine the thawed sweet corn, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until well mixed.

Create the Egg Mixture: In another bowl, whisk together the eggs and milk until fully combined.

Assemble the Casserole: Pour the egg mixture evenly over the waffle pieces in the baking dish, then layer the sweet corn and cheese mixture on top. Use a spatula to gently press down so that all components meld together.

Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the casserole is puffed and the cheese is bubbly and golden brown.

Garnish and Serve: Remove the casserole from the oven and let it cool for 5-10 minutes. Garnish with fresh parsley and serve with hot sauce on the side if desired.
