2 cups unsweetened shredded coconut

1 cup almond flour

½ cup honey or maple syrup

½ teaspoon vanilla extract

¼ teaspoon almond extract

¼ teaspoon sea salt

½ cup dark chocolate chips (optional, for dipping)

Extra shredded coconut for rolling (optional)

Combine Dry Ingredients: In a large mixing bowl, combine the shredded coconut, almond flour, and sea salt. Mix together until well combined.

    Add Wet Ingredients: Next, add the honey (or maple syrup), vanilla extract, and almond extract to the dry mixture. Stir until the mixture begins to clump and hold together.

      Form the Balls: Use your hands to scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is used. You should end up with approximately 20-24 balls.

        Chill the Balls: Place the coconut almond balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up.

          Optional Chocolate Dip: If desired, melt the dark chocolate chips in a microwave-safe bowl in 20-second intervals, stirring after each interval until smooth. Dip each coconut almond ball halfway into the melted chocolate, then roll in extra shredded coconut if you like. Place back on the parchment-covered baking sheet.

            Final Chill: Return the chocolate-dipped balls to the fridge for another 15-20 minutes to set the chocolate.
