Sweet Berry Yogurt Breakfast Bark

2 cups Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)

¼ cup granola (your choice)

2 tablespoons shredded coconut (unsweetened)

1 tablespoon chia seeds (optional)

A pinch of sea salt

Instructions
 

Prepare the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Stir well until fully mixed and smooth.

    Line the Baking Tray: Take a baking sheet (approximately 9x13 inches) and line it with parchment paper, allowing some overhang on the sides for easy removal later.

      Spread the Yogurt: Pour the yogurt mixture onto the prepared baking sheet. Using a spatula, spread it evenly until it reaches about ¼ inch in thickness.

        Add Toppings: Evenly distribute the mixed berries across the surface of the yogurt. Sprinkle the granola, shredded coconut, and chia seeds (if using) over the top, making sure to cover as much of the yogurt as possible.

          Freeze: Place the baking sheet in the freezer and let it freeze for at least 4-6 hours, or until the yogurt is solid.

            Cut into Pieces: Once the bark is fully frozen, remove it from the freezer. Using the parchment paper overhang, lift the entire sheet of bark out of the tray. On a cutting board, slice it into pieces (about 2x2 inches or as desired).

              Store: Place the pieces in an airtight container and keep them in the freezer. Enjoy straight from the freezer for a refreshing breakfast or snack!
