Ingredients

2 large ripe bananas, mashed

1 cup rolled oats

1 cup all-purpose flour (or whole wheat flour for a healthier option)

1/2 cup brown sugar (packed)

1/2 cup Greek yogurt (or applesauce for a dairy-free option)

1/2 cup honey or maple syrup

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

Mash the Bananas: In a large mixing bowl, mash the ripe bananas until smooth. Make sure there are no large lumps for an even batter.

Combine Wet Ingredients: Add the brown sugar, Greek yogurt (or applesauce), honey (or maple syrup), eggs, and vanilla extract to the mashed bananas. Whisk until the mixture is well blended and creamy.

Mix Dry Ingredients: In another bowl, combine the rolled oats, flour, baking powder, baking soda, salt, and cinnamon. Stir together until evenly mixed.

Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet mixture, stirring gently until no flour lumps remain. Be careful not to overmix.

Add Extras: If desired, fold in the chocolate chips and chopped nuts for added flavor and texture.

Fill Muffin Tins: Evenly distribute the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake: Place the muffin tin in the preheated oven and bake for about 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes. Then transfer them to a cooling rack to cool completely.

Serve and Enjoy: Enjoy these delicious Sweet Banana Oat Muffins warm or at room temperature. They are perfect for breakfast or a delightful snack!
