Ingredients

2 cups rolled oats

2 cups almond milk (or any milk of your choice)

2 medium apples, peeled, cored, and diced

1/2 cup brown sugar (or maple syrup for a healthier option)

1/4 cup honey (or agave syrup)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup raisins or pecans (optional)

1/2 cup chopped walnuts (for topping)

1 tablespoon melted coconut oil or butter (for greasing)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x9-inch or similar-sized baking dish with melted coconut oil or butter.

Mix Ingredients: In a large mixing bowl, combine the rolled oats, almond milk, brown sugar, honey, vanilla extract, ground cinnamon, nutmeg, baking powder, and salt. Stir until all the ingredients are well incorporated.

Add Apples: Gently fold in the diced apples and, if desired, the raisins or pecans. Ensure the apples are evenly distributed throughout the mixture.

Transfer to Bakeware: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly.

Add Toppings: Sprinkle the chopped walnuts evenly over the top of the oatmeal mixture for added crunch and flavor.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes or until the oatmeal is set, and the top is lightly golden.

Cool & Serve: Allow the oatmeal bake to cool for about 10 minutes before slicing. Serve warm, optionally drizzled with a bit more honey or maple syrup.

Store Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave before serving.
