2 large zucchinis

1 cup cooked quinoa

1/2 cup black beans, rinsed and drained

1/4 cup fresh cilantro, chopped

1 small jalapeño, seeded and minced (adjust for spice preference)

2 tablespoons olive oil

2 tablespoons honey or maple syrup (for a vegan option)

1 tablespoon soy sauce or tamari (for gluten-free option)

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper, to taste
