4 large whole wheat or spinach tortillas

1 cup cooked quinoa

1 cup mixed greens (spinach, arugula, and kale)

1 bell pepper (red or yellow), sliced

1 cup shredded carrots

1 ripe avocado, sliced

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled

1/4 cup walnuts, chopped (optional)

Salt and pepper to taste

For the Sweet and Spicy Balsamic Vinaigrette:

1/4 cup balsamic vinegar

2 tablespoons olive oil

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

1 teaspoon chili flakes (adjust to taste)

Prepare the Vinaigrette: In a small mixing bowl, whisk together the balsamic vinegar, olive oil, honey (or maple syrup), Dijon mustard, chili flakes, salt, and pepper until well combined. Adjust sweetness and spice levels according to your preference.

    Assemble the Wraps:

      - Lay out the tortillas flat on a clean surface.

        - Start by spreading a tablespoon of the balsamic vinaigrette in the center of each tortilla.

          - Layer each tortilla with a handful of mixed greens, followed by a scoop of cooked quinoa, and distribute the sliced bell pepper, shredded carrots, avocado slices, and cherry tomatoes evenly.

            Add the Final Touches: Sprinkle each wrap with crumbled feta cheese and chopped walnuts if using. Drizzle a little more of the vinaigrette on top for added flavor. Season with salt and pepper to taste.

              Wrap It Up: Fold the sides of the tortilla over the filling, then roll from the bottom up tightly to form a wrap. Repeat for the remaining tortillas.
