1 cup almond butter (creamy or crunchy as per preference)

1/2 cup honey or maple syrup

1/4 cup coconut flour

1/2 cup rolled oats

1/4 cup shredded unsweetened coconut

1/4 teaspoon sea salt

1/2 teaspoon vanilla extract

1/4 cup dark chocolate chips (optional)

1/4 cup chopped nuts (almonds, walnuts, or pecans) (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal later.

    Mix wet ingredients: In a large mixing bowl, combine the almond butter and honey (or maple syrup). Stir until you have a smooth and creamy mixture. Add the vanilla extract and mix until fully incorporated.

      Combine dry ingredients: In a separate bowl, whisk together the coconut flour, rolled oats, shredded coconut, and sea salt.

        Create the batter: Gradually add the dry mixture to the wet mixture, stirring until everything is well combined. The mixture should be thick but manageable. If desired, fold in the chocolate chips and chopped nuts for added texture and flavor.

          Spread and flatten: Pour the batter into the prepared baking pan, smoothing it out evenly with a spatula. Press down firmly to ensure it is tightly packed.

            Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges start to turn golden brown and the center is set. A toothpick inserted in the center should come out clean or with just a few crumbs.

              Cool down: Once baked, remove the pan from the oven and allow it to cool in the pan for about 10 minutes. Then, lift the bars out by the parchment paper and transfer them to a wire rack to cool completely.
