1 pound of baby carrots, peeled and sliced into ½-inch coins

¼ cup unsalted butter

⅓ cup brown sugar, packed

2 tablespoons honey

1 teaspoon ground cinnamon

¼ teaspoon nutmeg (optional)

¼ teaspoon salt

1 tablespoon lemon juice

Fresh parsley for garnish (optional)
