1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, melted

¼ teaspoon salt

4 large eggs

1 ½ cups granulated sugar

⅓ cup fresh lime juice (about 4-5 limes)

Zest of 2 limes

2 tablespoons cornstarch

1 teaspoon baking powder

1-2 teaspoons cayenne pepper (adjust for spice preference)

A pinch of salt

For garnish:

Lime zest

Powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the Crust: In a medium bowl, combine the flour, powdered sugar, melted butter, and salt. Mix until the mixture resembles wet sand. Press the mixture firmly into the bottom of the prepared baking pan to form an even layer.

      Bake the Crust: Bake in the preheated oven for 15-18 minutes, or until it’s lightly golden. Remove from the oven and let it cool slightly.

        Mix the Filling: In a large bowl, whisk together the eggs and granulated sugar until well combined and slightly frothy. Add the fresh lime juice, lime zest, cornstarch, baking powder, cayenne pepper, and a pinch of salt. Whisk until smooth and homogenous.
