Slow Cooker Fresh Summer Recipes Chili

1 pound ground turkey or chicken

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh or frozen)

1 medium red bell pepper, diced

1 medium yellow onion, diced

2 cloves garlic, minced

2 cups vegetable broth

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon paprika

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Sour cream or Greek yogurt (optional, for serving)

Instructions
 

In a skillet over medium heat, cook the ground turkey or chicken until browned and cooked through, breaking it apart with a wooden spoon (about 5-7 minutes). Drain excess fat if needed and set aside.

    In the slow cooker, add the black beans, kidney beans, diced tomatoes with green chilies, corn, red bell pepper, onion, garlic, and cooked ground meat.

      Pour in the vegetable broth, and add the chili powder, cumin, paprika, smoked paprika, salt, and pepper. Stir well until all ingredients are combined.

        Cover and cook on low for 6-8 hours or on high for 3-4 hours, allowing the flavors to meld beautifully.

          About 15 minutes before serving, stir in the lime juice and taste for seasoning adjustments.

            Once cooked, ladle the chili into bowls and garnish with fresh cilantro, avocado slices, and a dollop of sour cream or Greek yogurt if desired.

              Serve hot with your favorite cornbread or tortilla chips for a refreshing summer meal!
