Simple Turkey and Sweet Potato Chili

Ingredients
  

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 medium sweet potato, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

1 cup low-sodium chicken broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp salt (to taste)

¼ tsp black pepper (to taste)

1 tbsp olive oil

1 red bell pepper, diced

1 cup corn (fresh or frozen)

Optional toppings: chopped cilantro, avocado slices, shredded cheese, or sour cream

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Brown the Turkey: Add the ground turkey to the pot. Cook, breaking it apart with a spoon, until it is browned and fully cooked, about 5-7 minutes.

      Incorporate the Sweet Potatoes: Stir in the diced sweet potato and red bell pepper. Cook for an additional 3-5 minutes, allowing the vegetables to soften slightly.

        Add the Rest of the Ingredients: Pour in the diced tomatoes (with their juices), black beans, corn, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper. Stir everything together to combine well.

          Simmer: Bring the chili to a boil, then reduce the heat to low. Cover the pot and let the chili simmer for 25-30 minutes, or until the sweet potatoes are tender, stirring occasionally.

            Adjust Seasoning: Taste the chili and adjust seasoning as necessary, adding more salt, pepper, or spices if desired.
