Shrimp Lettuce Wraps with Blueberry Glaze

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 red bell pepper, diced

1 cup shredded carrots

2 green onions, sliced

2 tablespoons soy sauce

1 tablespoon lime juice

Salt and pepper to taste

For the Blueberry Glaze:

1 cup fresh or frozen blueberries

1/4 cup honey

2 tablespoons balsamic vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

Pinch of salt

Zest of 1 lime

For Serving:

1 head of butter or romaine lettuce (or both), leaves separated and washed

Optional toppings: chopped cilantro, crushed peanuts, or sesame seeds

Instructions
 

Prepare the Blueberry Glaze:

    - In a small saucepan over medium heat, combine the blueberries, honey, balsamic vinegar, and a pinch of salt. Cook for about 5-7 minutes, stirring occasionally, until the blueberries break down and the mixture begins to bubble.

      - Add the cornstarch-water mixture to the saucepan and stir well. Continue cooking for another 2-3 minutes until the glaze thickens. Remove from heat and stir in lime zest. Set aside.

        Cook the Shrimp Filling:

          - In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

            - Add the shrimp to the skillet and cook for 2-3 minutes, turning frequently until they turn pink and opaque.

              - Stir in the diced red bell pepper, shredded carrots, and sliced green onions. Cook for another 2-3 minutes until the vegetables are slightly tender.

                - Drizzle the soy sauce and lime juice over the mixture. Season with salt and pepper to taste. Mix well and remove from heat.

                  Assemble the Lettuce Wraps:

                    - Take a lettuce leaf and spoon a generous amount of the shrimp filling into the center. Drizzle with the blueberry glaze.
