Ingredients

1 baguette or ciabatta loaf, sliced into 1/2-inch thick rounds

3 cups ripe cherry or heirloom tomatoes, diced

1/4 cup fresh basil leaves, finely chopped

2 cloves garlic, minced

3 tablespoons extra-virgin olive oil, plus more for drizzling

1 tablespoon balsamic vinegar

Salt and freshly ground black pepper, to taste

1/2 cup freshly grated Parmesan cheese (optional)

Instructions

Prepare the Tomato Mixture: In a large bowl, combine the diced tomatoes, minced garlic, chopped basil, 3 tablespoons of olive oil, and balsamic vinegar. Season with salt and pepper to taste. Mix gently to combine, then let it sit for about 10-15 minutes to allow the flavors to meld.

Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the sliced baguette or ciabatta on a baking sheet. Lightly brush the tops with olive oil and sprinkle with a pinch of salt. Bake in the preheated oven for about 8-10 minutes, or until the bread is golden brown and crispy.

Assemble the Bruschetta: Once the bread is toasted, remove it from the oven. Spoon a generous amount of the tomato mixture onto each slice of toasted bread. For an extra touch, sprinkle freshly grated Parmesan cheese on top, if using.

Garnish and Serve: Drizzle a little extra olive oil over the assembled bruschetta and a sprinkle of cracked black pepper, if desired. Serve immediately for the best texture and flavor.
