Savory One-Pan Italian Sausage and Peppers

1 pound Italian sausage (sweet or spicy, your choice)

2 tablespoons olive oil

1 large onion, sliced

2 bell peppers (red and yellow preferred), sliced

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (adjust based on your spice preference)

Salt and pepper, to taste

1 can (14.5 oz) diced tomatoes (with juices)

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Crusty bread or hoagie rolls, for serving (optional)

Instructions
 

Cook the Sausage: In a large skillet or pan over medium heat, add the Italian sausage. Cook for about 5-7 minutes, turning occasionally, until browned on all sides. Remove the sausages from the pan and set aside.

    Sauté the Vegetables: In the same skillet, add the olive oil. Once hot, add the sliced onion and sauté for about 3 minutes until it becomes translucent. Add the bell peppers and continue to cook for an additional 5-7 minutes until they are softened.

      Add Garlic and Spices: Stir in the minced garlic, oregano, basil, and red pepper flakes. Cook for about 1-2 minutes until fragrant.

        Combine Ingredients: Return the browned sausages to the skillet. Pour in the diced tomatoes (with their juices) and balsamic vinegar. Stir well to combine all the ingredients. Season with salt and pepper to taste.

          Simmer: Reduce the heat to low, cover the skillet, and let it simmer for 10-15 minutes, allowing the flavors to meld together and the sausages to cook through.

            Serve: Once done, uncover and give it a gentle stir. Serve hot, garnished with fresh basil leaves. This dish pairs beautifully with crusty bread for mopping up the juices or in hoagie rolls for a delicious sausage sandwich.
