1 lb ground beef (preferably lean)

4 medium russet potatoes, diced into small cubes

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup frozen peas (optional, for color and sweetness)

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon salt (to taste)

½ teaspoon black pepper (or to taste)

½ cup beef broth (or more as needed)

1 cup shredded cheddar cheese (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they start to become golden and are fork-tender. Remove them from the skillet and set aside.

    Cook the Beef: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and bell pepper, sautéing for about 5 minutes until they soften. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Brown the Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Season with paprika, thyme, salt, and pepper. Cook until the beef is browned and fully cooked through, approximately 6-8 minutes. Drain any excess fat if necessary.

        Combine Ingredients: Return the cooked potatoes to the skillet along with the peas (if using). Pour in the beef broth, stirring well to combine. Bring to a gentle simmer and let it cook for about 5 minutes. If the mixture looks too dry, add additional beef broth as needed.
