Ingredients

1 lb ground beef

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

1 small bell pepper (any color), finely chopped

1 clove garlic, minced

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil (for cooking)

Optional toppings: sour cream, salsa, guacamole

Instructions

Cook the Beef Mixture: In a large skillet over medium heat, add the ground beef. Break it apart with a spatula and cook until browned, about 5-7 minutes. Drain any excess grease.

Add Vegetables: To the same skillet, add the chopped onion, bell pepper, and minced garlic. Sauté for 3-4 minutes until the vegetables are softened.

Season: Stir in the ground cumin, chili powder, salt, and pepper to the beef and vegetable mixture. Cook for an additional 2 minutes to let the flavors meld together. Remove from heat and let cool slightly.

Assemble the Quesadillas: Take one flour tortilla and sprinkle ¼ cup of cheddar cheese on one half of the tortilla. Top the cheese with a generous spoonful of the beef mixture, and then sprinkle another ¼ cup of mozzarella cheese on top. Fold the tortilla in half over the filling. Repeat with the remaining tortillas.

Cook the Quesadillas: In the same skillet, heat 1 tablespoon of olive oil over medium heat. Carefully place one quesadilla in the skillet. Cook for 3-4 minutes per side, or until golden brown and crispy, adding more oil if needed. Once done, remove and let cool for a minute before cutting it into triangles.

Serve: Serve warm with optional toppings like sour cream, salsa, or guacamole for dipping. Enjoy your savory beef and cheese quesadillas!
