Savory Baked Cheddar Potato Rounds

2 large russet potatoes

1 cup sharp cheddar cheese, grated

1/2 cup green onions, finely chopped

1/4 cup sour cream

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 cup olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the potatoes: Wash and scrub the russet potatoes thoroughly. Cut them into 1/4-inch thick rounds. There's no need to peel them for extra texture and nutrients.

      Boil the potatoes: Place the potato rounds in a pot of salted water and bring to a boil. Cook for about 5-6 minutes, until they are slightly tender but still firm. Drain and let them cool for a few minutes.

        Mix the toppings: In a bowl, combine the grated cheddar cheese, green onions, sour cream, minced garlic, smoked paprika, salt, and black pepper. Mix until well combined.

          Assemble: Brush both sides of each potato slice lightly with olive oil. Place them on the prepared baking sheet, then spoon a generous amount of the cheese mixture onto the tops of each potato round.
