1 lb (450g) boneless, skinless chicken breasts

1 cup uncooked white rice

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 jar (16 oz) salsa (mild or spicy, based on preference)

1 cup chicken broth

1 cup shredded cheddar cheese

1 tsp cumin

1 tsp chili powder

1 tsp garlic powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Lime wedges (optional, for serving)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken: In a skillet over medium heat, season the chicken breasts with salt, pepper, cumin, chili powder, and garlic powder. Cook the chicken for about 5-7 minutes on each side until it's golden brown and just cooked through. Let it cool slightly, then shred or dice into bite-sized pieces.

      Mix Base Ingredients: In a large mixing bowl, combine the uncooked rice, black beans, corn, salsa, and chicken broth. Mix well and season with additional salt and pepper, if needed.

        Combine Chicken: Add the shredded chicken to the rice mixture and stir until everything is well combined.

          Assemble the Bake: Pour the chicken and rice mixture into a greased 9x13 inch (3-liter) baking dish, spreading it evenly. Cover tightly with aluminum foil.

            Bake: Bake in the preheated oven for 35-40 minutes, or until the rice has absorbed most of the liquid and is tender.

              Add Cheese: Remove the baking dish from the oven, uncover it, and sprinkle the shredded cheddar cheese evenly on top. Return to the oven (uncovered) and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove the bake from the oven and let it rest for a few minutes. Garnish with freshly chopped cilantro and sliced jalapeños, if desired. Serve with lime wedges on the side for an extra zing.
