Roasted Garlic Cauliflower Mash

Ingredients
  

1 medium head of cauliflower, cut into florets

1 whole bulb of garlic

2 tablespoons olive oil

1/4 cup unsalted butter, at room temperature

1/2 cup heavy cream (or almond milk for a lighter version)

Salt, to taste

Freshly ground black pepper, to taste

2 tablespoons fresh chives, chopped (for garnish)

Optional: 1/4 cup grated Parmesan cheese for extra creaminess

Instructions
 

Prepare the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the bulb of garlic to expose the individual cloves. Drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized.

    Cook the Cauliflower: While the garlic is roasting, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until very tender. Drain well.

      Combine Ingredients: In a large mixing bowl, add the drained cauliflower and the roasted garlic cloves (squeeze them out of their skins). Add the remaining 1 tablespoon olive oil, butter, and heavy cream.

        Mash It Up: Using a potato masher, immersion blender, or regular blender, mash or blend the cauliflower mixture to your desired smoothness. If you’re using a regular blender, be careful not to over-blend as it may become gummy.

          Season: Taste and season the mash with salt and pepper. If you decide to add Parmesan cheese, blend it in at this stage for a richer flavor.

            Garnish and Serve: Transfer the mashed cauliflower to a serving dish. Sprinkle with chopped chives for a fresh burst of flavor. Serve hot as a delightful side dish that pairs wonderfully with roasted meats or as a standalone vegetarian delight.
