Roasted Garlic Alfredo Chicken Shells

2 cups large pasta shells

2 cups cooked chicken, shredded or diced

1 cup ricotta cheese

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 cup roasted garlic Alfredo sauce (store-bought or homemade)

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Pasta: Bring a large pot of salted water to a boil. Add the large pasta shells and cook according to package directions until al dente. Drain and set aside.

    Make the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1/2 cup of the Parmesan cheese, garlic powder, Italian seasoning, red pepper flakes (if using), salt, and pepper. Stir until all ingredients are well mixed.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Assemble the Dish: Spread half of the roasted garlic Alfredo sauce on the bottom of a 9x13 inch baking dish. Take a shell, spoon about 1-2 tablespoons of the chicken filling into each shell, and place it seam-side up in the baking dish. Repeat until all shells are filled and arranged.

          Add Sauce & Cheese: Once all shells are in the dish, pour the remaining Alfredo sauce evenly over the top. Sprinkle the remaining 1/2 cup of Parmesan cheese and the mozzarella cheese generously over everything.

            Bake: Drizzle some olive oil on top for extra flavor. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish & Serve: Once out of the oven, let the dish sit for about 5 minutes. Garnish with chopped fresh parsley before serving.
