Roasted Butternut Squash Sausage Pasta

1 medium butternut squash, peeled and diced into 1-inch cubes

2 tablespoons olive oil

Salt and pepper, to taste

8 ounces Italian sausage (mild or spicy, according to preference)

3 cloves garlic, minced

1 small onion, diced

12 ounces pasta (penne or farfalle works well)

1 cup vegetable broth (or chicken broth)

1 cup heavy cream

1 teaspoon dried thyme

¼ teaspoon red pepper flakes (optional)

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast Butternut Squash: On a baking sheet, toss the diced butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread it out in a single layer. Roast in the preheated oven for about 25-30 minutes, or until tender and caramelized, turning halfway through.

      Cook the Pasta: While the squash is roasting, cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

        Cook the Sausage: In a large skillet over medium heat, add the remaining tablespoon of olive oil. Once hot, add the sausage, breaking it apart with a spatula. Cook until browned and cooked through, about 6-7 minutes.

          Sauté Aromatics: Add the diced onion and minced garlic to the skillet with the sausage. Cook for an additional 3-4 minutes, or until the onion becomes translucent and fragrant.

            Combine Ingredients: Stir in the roasted butternut squash, vegetable broth, heavy cream, dried thyme, and red pepper flakes (if using). Bring the mixture to a gentle simmer and let it cook for about 5 minutes, allowing the flavors to meld.

              Mix in Pasta: Add the cooked pasta to the skillet and toss everything together. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

                Finish and Serve: Remove from heat and stir in the grated Parmesan cheese until well combined. Taste and adjust seasoning with more salt and pepper if needed. Garnish with fresh basil leaves before serving.
