Quick Turkey and Cheese Quesadillas for Dinner

2 cups cooked turkey, shredded or diced

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

4 large flour tortillas

1/2 cup bell pepper, diced (any color)

1/4 cup onion, finely chopped

2 tablespoons olive oil (or butter)

1 teaspoon taco seasoning (optional)

Salsa, sour cream, or guacamole for serving

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Filling: In a medium bowl, combine the shredded turkey, diced bell pepper, onion, and taco seasoning (if using). Mix well to combine all the ingredients.

    Heat the Skillet: In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat. Allow it to warm up for a minute.

      Assemble the Quesadilla: Place one tortilla in the skillet. On one half of the tortilla, sprinkle a layer of cheese followed by a portion of the turkey filling. Top with another layer of cheese and fold the tortilla over to create a half-moon shape.

        Cook the Quesadilla: Cook for about 2-4 minutes on one side, or until the tortilla is golden brown and crispy. Carefully flip it over and cook for an additional 2-4 minutes until the second side is also golden and the cheese is melted.

          Repeat: Transfer the cooked quesadilla to a cutting board and keep it warm while you repeat the process with the remaining tortillas and filling. You may need to add more olive oil or butter to the skillet for subsequent quesadillas.

            Serve: Once all the quesadillas are cooked, slice them into wedges. Serve warm with salsa, sour cream, or guacamole, and garnish with fresh cilantro, if desired.
