Ingredients

For the Cilantro Lime Rice:

1 cup long-grain white rice

2 cups vegetable broth (or water)

Zest and juice of 1 lime

1/2 cup fresh cilantro, chopped

1 tablespoon olive oil

Salt to taste

For the Taco Bowl:

1 lb ground beef or turkey (or a plant-based protein alternative)

1 tablespoon taco seasoning (store-bought or homemade)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (canned or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded lettuce

1/2 cup shredded cheese (cheddar, Monterey Jack, or a dairy-free alternative)

Sour cream or Greek yogurt, for serving

Lime wedges, for garnish

Fresh cilantro, for garnish

Instructions

Prepare the Cilantro Lime Rice:

    - Rinse the rice under cold water until the water runs clear. This helps to remove excess starch.

      - In a medium saucepan, heat olive oil over medium heat. Add the rice and sauté for about 2 minutes until slightly toasted.

        - Add the vegetable broth (or water) and a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for 15-18 minutes, or until the rice is tender and liquid is absorbed.

          - Remove from heat, fluff the rice with a fork, and stir in the lime zest, lime juice, and chopped cilantro. Set aside.

            Cook the Taco Filling:

              - In a skillet over medium heat, brown the ground beef or turkey, breaking it up with a spatula until fully cooked (about 5-7 minutes).

                - Drain any excess fat if necessary, then add the taco seasoning and a splash of water. Stir to combine, cooking for an additional 2-3 minutes until fragrant. If using plant-based protein, follow package instructions for browning.

                  Assemble the Taco Bowls:

                    - In a bowl, start with a generous scoop of cilantro lime rice as the base.

                      - Top with the seasoned ground meat, followed by black beans, corn, cherry tomatoes, diced avocado, and shredded lettuce.

                        - Sprinkle with cheese, and add a dollop of sour cream or Greek yogurt.

                          - Garnish with lime wedges and fresh cilantro.

                            Serve and Enjoy:

                              - Enjoy your vibrant taco bowl immediately, allowing everyone to customize their toppings to their preference!
