Quick Beef Tacos with Avocado Lime Crema

For the Beef Tacos:

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or your choice)

For the Avocado Lime Crema:

1 ripe avocado

½ cup sour cream or Greek yogurt

Juice of 1 lime

1 clove garlic, minced

Salt, to taste

Fresh cilantro, for garnish (optional)

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute.

    Season the Beef: Add the ground beef to the skillet. Break it apart with a spatula as it cooks, browning it evenly. Once the beef is fully cooked, drain any excess fat if necessary.

      Add Spices: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well to evenly coat the beef with the spices, and let it cook for another 2-3 minutes to allow the flavors to meld.

        Prepare the Tortillas: While the beef is cooking, warm the tortillas. You can do this by placing them on a skillet for about 30 seconds on each side or wrapping them in a damp paper towel and microwaving them for 30-45 seconds.

          Make the Avocado Lime Crema: In a blender or food processor, combine the avocado, sour cream (or Greek yogurt), lime juice, minced garlic, and salt. Blend until smooth and creamy. Taste and adjust seasoning if necessary.
