Quick Beef and Vegetable Stir-Fry over Rice

Ingredients
  

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 teaspoons cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced into strips

1 cup broccoli florets

1 medium carrot, julienned

3 cloves garlic, minced

1 tablespoon ginger, freshly grated

3 green onions, chopped (white and green parts separated)

2 cups cooked jasmine rice

Salt and pepper to taste

Sesame seeds for garnish (optional)

Instructions
 

In a medium bowl, combine the sliced beef, soy sauce, oyster sauce, and cornstarch. Mix well to coat the beef evenly and let it marinate for about 10 minutes.

    Heat 1 tablespoon of vegetable oil in a large stir-fry pan or wok over medium-high heat. Once hot, add the marinated beef in a single layer. Sear for about 2-3 minutes until browned but not fully cooked. Remove the beef from the pan and set aside.

      In the same pan, add the remaining tablespoon of oil. Add the minced garlic, ginger, and the white parts of the green onions. Sauté for 30 seconds until fragrant.

        Toss in the sliced bell pepper, broccoli florets, and julienned carrot. Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp.

          Return the beef to the pan and stir everything together. Cook for an additional 2-3 minutes until the beef is cooked through. Season with salt and pepper to taste.

            Serve the stir-fry over a generous portion of jasmine rice. Garnish with the green parts of the green onions and sprinkle with sesame seeds if desired.
