Ingredients

2 cups plain Greek yogurt

1 cup pumpkin puree (canned or fresh)

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice (or cinnamon, ginger, and nutmeg to taste)

1/4 cup nut mixture (almonds, pecans, or walnuts), roughly chopped

1/4 cup dried cranberries or raisins

1/4 cup dark chocolate chips (optional)

A pinch of sea salt

Instructions

Prepare the Yogurt Mixture: In a medium-sized bowl, combine the plain Greek yogurt, pumpkin puree, maple syrup, vanilla extract, and pumpkin pie spice. Mix thoroughly until smooth and well blended. Taste and adjust sweetness by adding more maple syrup if desired.

Prepare the Baking Sheet: Line a baking sheet (approximately 9x13 inches) with parchment paper, ensuring it hangs over the edges for easy removal later.

Spread the Yogurt Mixture: Pour the pumpkin yogurt mixture onto the prepared baking sheet. Use a spatula to spread it evenly, approximately 1/2 inch thick.

Add Toppings: Sprinkle the chopped nut mixture, dried cranberries (or raisins), and dark chocolate chips evenly over the top of the pumpkin yogurt. Lightly press the toppings into the yogurt to help them adhere during freezing.

Finish with Sea Salt: Lightly sprinkle a pinch of sea salt over the entire surface to enhance the flavors.

Freeze the Bark: Place the baking sheet in the freezer and let it freeze for at least 4 hours or until solid.

Break into Pieces: Once frozen, remove the bark from the baking sheet using the parchment paper for easy handling. Break it into pieces or cut it into squares.

Store Properly: Store the pumpkin yogurt bark in an airtight container between layers of parchment paper in the freezer. Enjoy within 2-3 weeks for the best quality.

Serve: Take out individual pieces as desired and enjoy a nutritious, delicious breakfast or snack straight from the freezer!
