Ingredients

1 cup pumpkin puree (canned or fresh)

1 cup semisweet chocolate chips

1 cup cream cheese, softened

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

¼ teaspoon salt

2 cups graham cracker crumbs (for coating)

1 tablespoon powdered sugar (optional, for additional sweetness)

1 tablespoon cocoa powder (optional, for additional coating)

Instructions

Melt the Chocolate: In a microwave-safe bowl, add the semisweet chocolate chips and melt them in the microwave in 30-second intervals, stirring in between until smooth and fully melted.

Prepare the Mixture: In another mixing bowl, combine the pumpkin puree, softened cream cheese, vanilla extract, pumpkin pie spice, and salt. Mix well until completely smooth and creamy.

Combine Ingredients: Gradually add the melted chocolate to the pumpkin mixture, stirring continuously until the chocolate is fully incorporated, and the batter is homogenous.

Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for at least 1 hour, or until it is firm enough to handle.

Shape the Truffles: Once chilled, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter). Place them on a baking sheet lined with parchment paper.

Coat the Truffles: In a shallow bowl, combine the graham cracker crumbs, powdered sugar, and cocoa powder (if using). Roll each truffle in the crumb mixture until fully coated.

Chill Again: After coating, return the truffles to the refrigerator for about 30 minutes to set further.

Serve and Enjoy: Serve your Pumpkin Spice Truffles chilled or at room temperature for a delightful fall treat! Enjoy with a cup of coffee or tea for a cozy experience.
