1 small pumpkin (about 1 pound), pureed or 1 cup canned pumpkin puree

6 large eggs

1 cup whole milk (or milk alternative)

1/2 cup brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon salt

8 slices of challah or brioche bread, cut into cubes

1/2 cup chopped pecans (optional)

1/4 cup maple syrup (for drizzling)

Powdered sugar (for dusting)

Prepare the Bread: Preheat your oven to 350°F (175°C). In a large mixing bowl, whisk together the pumpkin puree, eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt until smooth.

    Combine Ingredients: Gently fold in the bread cubes and chopped pecans (if using) into the pumpkin mixture until the bread is fully coated.

      Grease Muffin Tin: Lightly grease a standard muffin tin with cooking spray or butter. This will help prevent sticking.

        Fill the Cups: Use a scoop or spoon to fill each muffin cup with the pumpkin spice mixture. Press down slightly to pack them, ensuring that they’ll hold their shape while baking.
