1 cup all-purpose flour

1/2 cup almond flour

1/2 cup sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 tsp pumpkin pie spice

1/2 cup canned pumpkin puree

2 large eggs

1 tsp vanilla extract

1/2 cup mini chocolate chips (optional)

1/2 cup chopped walnuts or pecans (optional)

Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice until well combined.

      Blend wet ingredients: In a separate bowl, mix the pumpkin puree, eggs, and vanilla extract until smooth.

        Combine: Gradually add the wet mixture to the dry ingredients, stirring until a sticky dough forms. If using, fold in the mini chocolate chips and nuts until evenly distributed.

          Shape the dough: Lightly flour your hands and divide the dough into two equal parts. Shape each part into a log about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, spacing them about 2 inches apart.

            First bake: Bake the logs in the preheated oven for about 25-30 minutes, or until they are golden and slightly firm to the touch. Remove from the oven and let cool for about 10 minutes.

              Slice the logs: Once the logs are cool enough to handle, use a serrated knife to slice them diagonally into 1-inch thick pieces. Lay the slices cut-side down on the baking sheet.

                Second bake: Bake the biscotti bites again for an additional 15-20 minutes, or until they are crisp and golden brown. Flip them halfway through the baking time for even texture.
