1/2 cup pumpkin puree (not pumpkin pie filling)

2 tablespoons brown sugar

1 tablespoon granulated sugar

1 teaspoon baking powder

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup buttermilk (or regular milk with 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter

Cooking spray or additional butter for the pan

For the dip:

1/2 cup maple syrup

1/4 cup cream cheese, softened

1 teaspoon vanilla extract

A pinch of cinnamon

Prepare the Batter: In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

    Combine Wet Ingredients: In a separate medium bowl, mix the pumpkin puree, buttermilk, egg, and melted butter until smooth.

      Mix Dry and Wet Ingredients: Gently fold the wet ingredients into the dry ingredients using a spatula, mixing until just combined. Be careful not to overmix; a few lumps are okay.

        Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or melted butter.

          Cook the Pancake Sticks: Pour about 1/4 cup of batter for each pancake onto the skillet, shaping them into rectangles or longer shapes to create sticks. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown and cooked through. Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
