1 cup all-purpose flour

1 cup cornmeal

1 cup pumpkin puree (canned or fresh)

1/3 cup brown sugar

1/3 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1 cup buttermilk (or milk with 1 tbsp lemon juice added)

1/3 cup vegetable oil or melted butter

2 large eggs

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a 9-inch square baking dish or line it with parchment paper for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, cornmeal, brown sugar, granulated sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well combined.

      Combine Wet Ingredients: In another bowl, mix the pumpkin puree, buttermilk, vegetable oil (or melted butter), and eggs. Whisk until the mixture is smooth and well blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

          Bake: Pour the batter into the prepared baking dish, smoothing the top with a spatula. Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.

            Cool and Serve: Once baked, remove the cornbread from the oven and let it cool in the dish for about 10 minutes. Then, transfer it to a wire rack to cool slightly before slicing. Serve warm, optionally with butter or honey.
