Ingredients
  

1 block (14 oz) firm tofu, pressed and cubed

2 cups fresh pineapple, diced

1 red bell pepper, chopped

1 cucumber, thinly sliced

1 cup cherry tomatoes, halved

1 avocado, diced

¼ cup red onion, finely chopped

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon maple syrup or honey

1 tablespoon fresh lime juice

1 teaspoon fresh ginger, minced

Salt and pepper to taste

½ cup fresh cilantro or mint leaves, for garnish

Optional: Sesame seeds and lime wedges for serving

Instructions
 

Marinate the Tofu: In a mixing bowl, combine soy sauce, sesame oil, maple syrup, lime juice, and minced ginger. Add cubed tofu and toss gently to coat. Allow it to marinate for at least 15-20 minutes.

    Prepare the Vegetables: While the tofu is marinating, prepare the vegetables. In a large bowl, mix together the diced pineapple, chopped red bell pepper, sliced cucumber, cherry tomatoes, diced avocado, and finely chopped red onion.
