2 ripe pears, peeled and diced

1 tablespoon lemon juice

2 tablespoons honey (or maple syrup for a vegan option)

1 cup heavy cream (or coconut cream for dairy-free)

1 teaspoon vanilla extract

1 cup hazelnuts, toasted and roughly chopped

2 tablespoons powdered sugar

1 teaspoon gelatin (or 1 tablespoon agar-agar for vegan option)

2 tablespoons water

Pinch of salt

Fresh mint leaves, for garnishing

Prepare the Pears: In a small saucepan, combine the diced pears, lemon juice, and honey (or maple syrup). Cook over medium heat for about 5-7 minutes until the pears are soft. Remove from heat and let cool.

    Blend the Pears: Once cooled, transfer the pear mixture to a blender. Blend until smooth. Set aside.

      Dissolve Gelatin: In a small bowl, sprinkle the gelatin over 2 tablespoons of water and let it sit for about 5 minutes to bloom. Then, gently heat in the microwave or over a double boiler until fully dissolved. If using agar-agar, follow the package instructions to dissolve.

        Whip the Cream: In a separate mixing bowl, whip the heavy cream (or coconut cream) with powdered sugar, vanilla extract, and a pinch of salt until soft peaks form.

          Combine Ingredients: Gently fold the pear puree into the whipped cream. Then, add the dissolved gelatin (or agar-agar) gradually while folding. Mix until just combined.

            Add Hazelnuts: Fold in half of the chopped hazelnuts, reserving the rest for topping.

              Pour into Cups: Spoon the mousse mixture into small serving cups or glasses, filling them about ¾ full. Refrigerate for at least 2 hours to set.

                Serve: Once set, remove from the refrigerator. Top each mousse cup with remaining chopped hazelnuts and garnish with fresh mint leaves just before serving.
