2 ripe peaches, pitted and diced

1 cup fresh raspberries (or frozen, thawed)

2 tablespoons honey (or maple syrup)

1 cup Greek yogurt (plain or vanilla)

1 cup granola (your choice)

1 teaspoon vanilla extract

Fresh mint leaves for garnish (optional)

Prepare the Peaches: In a medium bowl, combine the diced peaches with 1 tablespoon of honey. Gently mix and let it sit for about 10 minutes, allowing the flavors to meld and the peaches to release some juice.

    Prepare the Raspberries: In another bowl, mash about half of the raspberries using a fork. Mix in the remaining tablespoon of honey and set aside. This will be your raspberry sauce.

      Prepare the Yogurt: In a mixing bowl, combine the Greek yogurt with the vanilla extract. Stir well until smooth and creamy.

        Layer the Parfaits: In serving glasses or bowls, start with a layer of the yogurt mixture (about ¼ cup per glass). Next, add a layer of the honeyed peaches (about 2 tablespoons), followed by a layer of the raspberry sauce.

          Add Granola: Sprinkle a layer of granola (about ¼ cup) on top of the raspberry layer.
