Ingredients

2 large flatbreads or naan

2 ripe peaches, thinly sliced

4 oz goat cheese, crumbled

1 cup fresh arugula

1/4 cup balsamic glaze

1 tablespoon olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

Optional: crushed red pepper flakes for added heat

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Flatbreads: Place the flatbreads on a baking sheet. Brush each flatbread lightly with olive oil and season with salt and pepper.

Layer with Goat Cheese: Evenly spread the crumbled goat cheese over the flatbreads. Make sure to cover the surface, leaving small gaps for the peaches.

Add Peaches: Arrange the thinly sliced peaches over the goat cheese. Try to overlap them slightly for a beautiful presentation.

Season: Sprinkle fresh thyme leaves over the peaches and goat cheese for flavor. Add a pinch of crushed red pepper flakes if desired for a bit of heat.

Bake: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the flatbread is crispy and the goat cheese is slightly golden.

Finish with Arugula: Once baked, remove the flatbreads from the oven and let them cool for a minute. Then, top with fresh arugula for a peppery contrast.

Drizzle with Balsamic Glaze: Finish by drizzling balsamic glaze over the top, adding a nice sweet-tanginess to the flatbread.

Slice and Serve: Cut the flatbreads into slices and serve warm as a delightful appetizer or light meal.
