Parmesan Roasted Mushroom Toasts

8 oz (225g) cremini or shiitake mushrooms, cleaned and sliced

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or 1/3 teaspoon dried thyme)

2 cloves garlic, minced

Salt and pepper, to taste

1/4 cup grated Parmesan cheese

1 tablespoon balsamic vinegar

4 slices of hearty bread (sourdough or rustic bread works well)

1/4 cup ricotta cheese (optional, for spreading)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Prepare the Mushrooms: In a mixing bowl, combine the sliced mushrooms, olive oil, minced garlic, thyme, salt, and pepper. Toss to coat the mushrooms evenly.

      Roast the Mushrooms: Spread the marinated mushrooms out in a single layer on a baking sheet. Roast in the preheated oven for about 15 minutes, stirring halfway through, until the mushrooms are tender and golden.

        Add Parmesan: Remove the baking sheet from the oven and sprinkle the roasted mushrooms with grated Parmesan cheese. Return to the oven for an additional 5 minutes, or until the cheese is melted and slightly crispy.

          Toast the Bread: While the mushrooms are in the oven for the second time, toast the slices of bread until golden brown, either in a toaster or on a grill pan.

            Drizzle with Balsamic: Once the mushrooms are finished roasting, drizzle them with balsamic vinegar for an extra flavor kick.
