1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

1 small onion, diced

3 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried oregano

½ teaspoon black pepper

½ teaspoon salt (or to taste)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat Your Oven: Preheat your oven to 375°F (190°C).

    Sauté the Chicken: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent (about 3-4 minutes). Add the chicken pieces and season with paprika, oregano, salt, and black pepper. Cook for about 5-7 minutes until the chicken is browned but not fully cooked.

      Combine Rice and Broth: Stir in the rice, ensuring it’s evenly distributed. Pour in the chicken broth and mix well. Bring the mixture to a gentle simmer for about 2-3 minutes.
